This Junmai Daiginjo is made using a distinct form of yeast which works best at low brewing temperatures. The result is a mixture of flavours which would otherwise only be experienced from a variety of different bottles. The strong umami-rich flavours, complemented by a slight hint of sourness, are enhanced by the rich aromas of the light and crispy Fuji Apple. Best enjoyed cold, this saké leaves a clean, slightly dry finish to the palate.
