The Fukuju brewery is situated in the Nada region of Kobe City, Japan, near Rokko Mountain.
Extreme temperature swings on the north side of the mountain are ideal for growing sake rice. Cold winds blowing down the south side are perfect to mellow the fermentation process, which means better-controlled brewering for richer, smooth taste. Local mountain streams supply naturally pure water with just the right mineral content. With these basic ingredients, the Fukuju brewery has been making its signature sake for over 265 years.
